| Who's Who: How Well Do You Know Your Fellow Campers?
Nina Russell is a veteran camper conquering her third camp this month. Nina has received the award of most improved camper and also has close to perfect attendance - and it is reflected in her results! She didn't mention it here, but rumor has it that Nina really enjoys updowns and sprints....find out what else you didn't know about Nina:
What is your idea of perfect happiness?
I'm kind of old fashion...I like the idea of a white picket fence, 2.5 kids, a dog and all my friends and family living in the same city or even better the same neighborhood.
What is your greatest extravagance
Clothing--I think when you have a closet dedicated to hoodies, you might have a problem.
When do you feel healthiest?
6:45 a.m. on my way home from boot camp!
Who is your favorite professional sports team?
Avalanche, what can I say...I'm Canadian and we love our hockey.
What trait do you most deplore in others?
When a person has no regard for others. I think the way you treat people says a lot about your character.
Which talent would you most like to have?
Breakdancing or really any form of dancing. I think I have rhythm, but I've been told otherwise.
What is your favorite magazine?
I just can't seem to get enough of the celebrity gossip. People, US Weekly and In Touch are my favorites. I usually end up leaving the grocery store with all three magazines even though they all have the same pictures.
What is your most treasured possession?
My pictures because they are irreplaceable.
What is one thing other campers would be surprised to find out about you?
My friends say I have adventure phobia, but I think living in Japan cured me of that. |

Healthy Eating
Did you know...Sweet potatoes are related to the Morning Glory family, not potatoes? To easily peel a boiled sweet potato immediately submerse it in cold water. Sweet potatoes are high in Vitamin A and C and are a good source of Vitamin E because they are fat free. When eaten with the skin, a sweet potato has more dietary fiber than a bowl of oatmeal. The orange color of sweet potatoes is due to the high beta-carotene content which helps with vision, protects the cardiovascular system, boosts immune functions, and helps maintain healthy skin among other functions. Sweet potatoes aren't just for holiday dinners, try them baked or mashed, or in a favorite recipe.
Sweet Potato Muffins
2 1/4 cups unbleached, all-purpose white flour
1 T baking powder
1 t baking soda
1/2 t salt
1/2 t ground cinnamon
1/2 t ground allspice
1 T unsalted butter
1/2 cup packed light brown sugar
2 egg whites
2 cups buttermilk
3 T vegetable oil
1 cup mashed, cooked sweet potato (from 1 large potato)
Preparation
1) Preheat the oven to 375F. Coat 16 muffin cups with nonstick spray.
2) Sift together the dry ingredients. Stir until no brown streaks of spices remain.
3) In another bowl, beat the butter and brown sugar until no lumps remain. Then beat in the egg whites, buttermilk, oil, and sweet potato. Pour the wet ingredients into the dry. Gently fold the two together until an evenly moist batter forms.
4) Pour into the muffin cups and bake for 25 minutes, until done.

Tips from Tiffinie

Water
How much is enough?
Water intake is so important, especially when you increase your activity level. How much is enough? You should drink 1 ounce for every pound you weigh. So if you weigh 120 lbs. you should drink 120 oz. per day.
Are you drinking enough?
Chances are you are not. To help you increase your intake follow these tips:
We have all had a lemon wedge in our water, but add an orange slice instead for added flavor.
Instead of filling a huge water bottle for the day, use a small cup and fill it up frequently. This way your water will be fresh and cold. Also, it is easier to down a small cup of water than to continuously work on that giant bottle.
Remember after a heavy carbohydrate meal, you should increase your water intake to help your body store the carbs for energy instead of fat.
You need to hydrate BEFORE your workout. Don't wait until you get to the gym.
Do you know?
*75% of the human brain is water.
*A person can live a month withhout food, but only a few days without water.
*Water expands by 9% when it freezes. Ice is lighter than water which is why it floats.
*By the time a person feels thirsty, s/he has lost over 1% of his or her total water amount.
*An adult human body is comprised of 70% water versus an infant which is made up of 80% water. |
